I'm surprised nobody has mentioned "Pig Tales: A Novel of Lust and Transformation" by Marie Darrieussecq. The entire novel is an extensive transformation of a young woman into a pig, stretched over 120 pages. There is a lot of sex scenes in it as well, as she transforms from acts of degradation (sort of). It's social satire, but also perfect TF material. The original version is French but there is a great English translation available if you can find a copy.
