No visible process(nice before and after effect) but in this episode the character Izana Shinatose who up til this point has been a Unisex (a certain type of human who pick a sex once they find a suitable mate) picks to become fully female. The result is growing large breasts and widening hips which leads to a pilot suit to burst open on her and a bathtub scene admiring thier size.

Well really the process has been go since early in the series. The transformation from neither sex to a gender is slow. She has been hiding the fact that's she's changing for a while out of embarrassment. This is just the part where we say 'yep she's totally a girl now.'

Reminds me of an anime I've seen before with a similar concept of people

growing up as unisex until the age of maturation and choosing their gender as

either male or female with slow process. Can't remember the name though.

However, that anime had spiritual rituals for them to do so and not just

naturally like in this one.

Not sure if this is it but http://myanimelist.net/anime/879/Simoun is close to that description except they all start as females instead of unisex.
