Why they didn't just have the Phoenix force resurrect her (it is called the Phoenix force after all) I don't know, unless they wanted Jean "unsullied" for the re-banding of the original X-Men in "X-Factor". I pretty much gave up reading the Excalibur series from the point Claremont (who was running out of ideas anyway) and artist Alan Davis left, but covers that promise EC always catch my eye.
I find the Night-Mare demon concept interesting though, probably a play on the folklore of one being hag-ridden (having a night-hag riding you when you're having nightmares, usually influencing you very negatively).
