Well it was played off as his kind of achillies heel. In training he was one of the best swordsmen in the squad, but as soon as he got in a fight his bowels failed him and he had to hide somewhere.

Man, I've gone through like 10 pages on TV tropes about characters with comedic bladder problems as well as all the pages I can find on monster hunting and monster transformation and I can't find any mention of this show. I really hope I didn't just dream up this whole thing.

Man, it's anime. The main character was probably Daisuke or Ryu or something and his girlfriend was probably Sakura or Hikari. I can't keep this stuff straight.

I'm trying to find a manga that was posted somewhere on the forums (I think under Transformation or Shadow00000's Manga House) but haven't had any luck

In it a girl (I think a priestess or priest's aid) has been cursed with a penis which she ends up releasing a succubus from who then transforms her into a succubus too

I know a few decades ago one of the kids horror comic series
(Tales From the Unexpected?Charltons "Haunted Mansion" or
"Monster Hunters" ?)had a cover showing a anthro kitty monster.Something about a
mad scientists pet cat slurping up the Mutagen X,going anthro female
and bumping off the wife.

Mystery solved! The show was Kemonozume. It was never picked up for domestic release which might explain the relative obscurity. Unfortunately the laptop I'm using now can't handle any kind of decent video playback, but if anyone else wants to check it out it's probably a good show, transformation or no. The show isn't at all shy about showing off breasts, and according to wikipedia one of the human female characters is forced to become a monster near the end of the series.
