So instead of having your character work through her tragic past and learn to live with it or at least accept it, you just wipe her mind as if it never happened? Since she doesn't remember it now that she's transformed, and presumably nobody's going to mention it to her, the underlying plot point now serves no purpose for her as a character. Trust me, it would be more dramatic if she had to contrast being saved via TF into a foxgirl with the memories of her tragic past. I'll stop there before I start rewriting your characters in my head, and move on.

The point you make about this not being the same Julie that Don knew is a well-used literary device - a character from one parallel world goes to another and finds that world's version of his dead beloved, whom he feels responsible for even though he really shouldn't because it's not the same person. I can see how TFing her physically would help him differentiate the two in his mind (although less so if she just looks the same, only younger with fox ears and tail), but mentally, this doesn't make a difference. You go from having an alternate Julie who doesn't know who Don is, to an alternate Julie who still doesn't know who Don is. A mindwipe doesn't change the situation from either character's point of view.
